Dining Out in Turkey: Restaurant Types, Ordering Turkish Food & Bill Etiquette

Master Turkish dining etiquette across Esnaf Lokantası, Kebapçı, and Meyhane. Learn how to order, ask for dietary preferences, request the check, and hospitality expressions.

Turkish cuisine is celebrated as one of the richest culinary traditions in the world. From bubbling clay pot stews in neighborhood tradesman canteens (Esnaf Lokantası) to sizzle-roasted skewers at an open charcoal grill (Ocakbaşı) and meze platters at a seaside tavern (Meyhane), dining out is the heartbeat of Turkish social life. However, different restaurant formats have very different ordering rituals. In an Esnaf Lokantası, you don’t look at a printed menu—you walk up to steaming glass display counters and point to what looks delicious. At upscale restaurants, you will navigate cover charges (kuver), complimentary teas (ikram), and specific bill-splitting phrasing.

1. The Four Essential Turkish Restaurant Styles

  • Esnaf Lokantası (Tradesmen’s Canteen):
    The cornerstone of daily Turkish lunch culture. There are no printed menus; you walk directly up to a long steam counter (tezgâh) where freshly cooked home-style vegetable dishes, legume stews (kuru fasulye), stuffed eggplants (karnıyarık), and rice pilafs are displayed. You point to what you want, and a hot plate is plated for you immediately.
  • Kebapçı / Ocakbaşı (Kebab & Charcoal Grill):
    Specializing in regional Anatolian grilled meats (Adana, Urfa, Beyti, Şiş Kebap). Meals automatically arrive with a lavish spread of complimentary grilled peppers, hot flatbread (lavaş), sumac onions, and fresh herb salads.
  • Meyhane (Traditional Tavern):
    Atmospheric establishments centered around cold and hot appetizers (meze), seasonal fresh seafood, conversation (sohbet), and acoustic music (Fasıl). Diners typically inspect a refrigerated tray or display case of mezes at the beginning of the evening.
  • Çorbacı (24-Hour Soup House):
    Open around the clock, these neighborhood institutions serve hot, restorative bowls of red lentil (Mercimek), chicken soup (Tavuk suyu), or traditional garlic-vinegar broths. They are especially popular for early breakfast or late-night dining.

2. Dialogue 1: Ordering at a Tradesmen Canteen (Esnaf Lokantasında)

Here is a natural conversation between a diner (Julian) and the master chef behind the steam counter (Aşçı Usta).

Usta:            Hoş geldiniz efendim! Ne arzu edersiniz, sulu yemeklerden ne verelim?
                 (Welcome sir! What would you desire, what shall we serve from the hot stews?)

Julian:          Hoş bulduk usta! Tezgâhtaki yemekler harika görünüyor. Şu patlıcanlı yemek nedir?
                 (Glad to be here master chef! The dishes on the counter look wonderful. What is that eggplant dish?)

Usta:            O fırında karnıyarık, kıymalıdır. Yanına da güzel bir tereyağlı pirinç pilavı verelim mi?
                 (That is oven-baked karnıyarık, stuffed with ground meat. Shall we serve a nice buttered rice pilaf next to it?)

Julian:          Harika, bir porsiyon karnıyarık ve yanına az pilav alayım. Cacık da var mı?
                 (Wonderful, let me have one portion of karnıyarık and a small serving of pilaf next to it. Is there cacık too?)

Usta:            Var efendim, taze naneli cacığımız dolapta hazır. Masanıza gönderiyorum hemen.
                 (There is sir, our fresh mint cacık is ready in the fridge. I am sending it to your table right away.)

Julian:          Elinize sağlık usta, teşekkürler!
                 (Health to your hands chef, thank you!)

3. Dialogue 2: Asking for the Bill at Dinner (Hesap İsteme)

Here is how to smoothly wrap up a sit-down dinner with your waiter (Garson).

Diner:           Pardon, bakar mısınız?
                 (Pardon, could you look here / excuse me?)

Garson:          Buyrun efendim, bir arzunuz mu vardı?
                 (Yes please sir/ma'am, did you have a request?)

Diner:           Yemekler çok lezzetliydi, şefe teşekkürlerimizi iletin lütfen. Hesabı alabilir miyiz?
                 (The dishes were very delicious, please convey our compliments to the chef. Could we get the check?)

Garson:          Afiyet olsun, memnun kalmanıza çok sevindik! Hesabınızı getiriyorum; öncesinde ikram çay veya kahve alır mıydınız?
                 (May it be good health, we are very glad you enjoyed it! I am bringing your bill; before that, would you like a complimentary tea or coffee?)

5. Cultural Dining Nuances

  • The Sacred Tea (İkram Çay): In almost all Turkish restaurants, tea offered after a meal is complimentary (ikram). It is an expression of genuine Turkish hospitality. Asking for the check immediately after ordering tea or refusing rudely is avoided; relax and enjoy a 5-minute chat over tea before asking for the bill.
  • Never Shout Across the Room: To summon a server, make gentle eye contact, raise an index finger slightly, and say politely: “Pardon, bakar mısınız?” (Pardon, could you look here?)
  • Complimentary Table Water: Bottles of water placed in the center of the table at private sit-down restaurants are usually billed if opened, whereas small water carafes at tradesmen canteens are typically free. Check the cap seal.
